The vineyard's greensand soil is a significant advantage in England's marginal climate – it warms up earlier in spring, offering a longer growing season that allows grapes to develop full ripeness and complexity. The estate nurtures the three classic Champagne varieties: Chardonnay, Pinot Noir, and Pinot Meunier, which form the backbone of their award-winning wines.

At Ambriel, winemaking is a true partnership. Wendy grows the grapes while Charles ferments them, and blending is done together – sipping and slurping their way to stunning results. This hands-on, artisanal approach ensures every bottle receives personal attention from vine to finished wine.

The winery is nestled in the centre of the vineyard at Redfold Vineyards, allowing complete control over the winemaking process.
