After studying in Switzerland, Guillaume was convinced that his partner's family house in the New Forest was the perfect place to start a small wine and cider production business. He planted both a vineyard and an orchard, combining traditional winemaking knowledge with the unique terroir of this ancient English landscape. The quality of the products is the daily goal, whether working in the fields or in the winery.

The estate produces a range of wines alongside artisan ciders, including varieties such as Dabinett cider.
